Lava cakes arrive at the store part-baked and are finished in the oven when you order, which is why they come out with a liquid centre rather than a uniformly cooked one. That process is also why they are consistent between stores in a way that few dessert items are.
Where it fits on value
Priced as an add-on rather than a bundle item at most chains, typically discounted a dollar or two if there is already a pizza in the basket. That add-on rate is where it makes sense; at full standalone price it is expensive for what it is.
